Hard anodised aluminium is stronger and harder than regular aluminium and the new ceramic non-stick surface makes it a pleasure to cook with and easy to clean up afterwards.
I use MSR Ceramic cookware for cooking all kinds of food and I can cook even delicate foods like scrambled eggs without burning or sticking. Omelettes used to be a tall order, but provided you have a stove with a reasonably wide flame spread, or if you keep the pan moving to avoid ‘hot spots’, then omelettes are on the menu too.
With a little oil or butter whole chicken breasts are easy, although I usually cut them in to more manageable sized pieces.
If you want steak, try cutting it into four or six smaller pieces and keep it moving in the pan. I’ve don’t this several times and you can seal the meat to keep the juices inside without overheating the pan
If you are cooking messy foods, frying meat in oil or sauces with a lot of oil in (curry for example), then the non-stick pan is very easy to clean. The surface is so smooth most food and oil can be poured off. A wipe with a sheet of kitchen paper or a cloth finishes the job. You can even leave your pan until the morning. Dried on food slides off the surface just as easily.
The handle has a hinge so flips over the top of the pans locking the lid in position for transport. It’s a neat trick.
